Of Course YOU Can Have Dessert~!

💫 I'm going on 3 weeks of this thing called "keto" and I like to say that I'm doing keto-ish as I'm definitely not going to be eating FAT BALLS in this lifetime or next!


I jumped on the scale this morning and so far I'm down a hell of lot more than I ever imagined or tried to lose, (I'm a firm believer in slow and gradual or it's coming back fast and furious!), and as I haven't been this weight since Brett and I started dating 7 years ago, I'm doing the happy dance as I feel so good, but I wouldn't have gotten this far without my "dessert". 😌


🍫 I am a freak when it comes to chocolate, so when I found numerous keto recipes online for any and everything dessert, these were a few that I fell in love with and I even tweaked this one to be my own... this was by far my favourite, and I'm not a cook and I DON'T bake... just check out my "cake challenge" that I do every year in January 🤦🏻‍♀️🤣🦄


As promised, here is what I'm snacking on and what's gotten me through the last several weeks... ENJOY!! 😋


Chocolate Avocado Mousse (chill some of these ingredients overnight in fridge)

~ 2 Ripe Avocado's ( mine were really ripe and I chilled them overnight in the fridge)

~ 1/2 cup of sweetener (I had stevia on hand and made sure that it was powdered but you can also use Splenda, or Xylitol as well and blend thoroughly)

~ Organic Unsweetened Canned Coconut Milk (I chilled 1-389ml can overnight and separated the cream from the milk and used the entire contents of the cream and saved the milk)

~ 3/4 cup of Unsweetened Cacao Powder

~ 1 tsp of Pure Vanilla Extract

~ 2 tsp of Cinnamon

~ 2 tsp of Nutmeg

~ 1/2 tsp of salt


Mix all ingredients together in a blender until silky smooth, remove and chill overnight. 🥶


DO NOT WASH OUT BLENDER - WITH LEFTOVER CHOCOLATE MOUSE IN BLENDER ✨ Pour 1L of Whipping Cream in Blender and blend too desired thickness.


🥄 Spoon into bowl, cover and chill overnight (yes you will have plenty of whipping cream but you will thank me for this later) 💋 😌


🤷🏻‍♀️ FOLLOWING DAY...


Spoon mousse into a cup/bowl, top with whipping cream and add a few slightly thawed Raspberries and Blackberries to top it off... and voila, The most amazing #ketofriendly #desert

 

~ My 2nd choice for a keto friendly desert is a bowl of dark berries topped with same whipping cream, drizzled with a cap full of pure vanilla extract and a few "lilly's chocolate chips"


~ Lastly, try putting a handful of lilly's chocolate chips in a small zip lock baggy with your choice of Pecans, Brazil nuts, Macadamia nuts, Walnuts, Hazelnuts, Pine nuts, Almonds, or Peanuts.


*** I tend to carry around a snack bag with a few of each just in case*** so far, so good! 💁🏻
