CHEDDAR BAY BISCUITS


RECIPE:


Add these 1st 4 ingredients first..

2 CUPS ALMOND FLOUR 2 TSP BAKING POWDER 1 TSP SALT 1/2TSP PEPPER 1TSP GARLIC POWDER WHISK TOGETHER THOROUGHLY...


FORK IN 4 TABLESPOONS OF SOFTENED GRAIN FED BUTTER

ADD 2 EGGS STIR THOROUGHLY


ADD 6 OUNCES OF SHREDDED CHEDDAR CHEESE

STIR STIR STIR


PREHEAT OVEN TO 350 LINE COOKIE SHEET WITH PARCHMENT PAPER

ROLL INTO 8 BALLS AND FLATEN TOPS

BAKE 20 MINUTES

... here's another that I created myself due to wanting to try some new ingredients when meal prepping for the week the other day. I've been tweaking recipes lately as I'm not a fan of super-rich food but I'm in love with everything cream cheese and hope you love this one as much as I do!!


Here are my two recipes for a similar dish.



Baked Chicken with Broccoli & Cheese Filling


Recipe ONE:


Slice 4 chicken breast down the middle but do not cut through entirely and place them on a large cooking sheet on parchment paper or a large cutting board as you're going to need the room


You'll need:

Toothpicks

Cream Cheese

Bacon (I used pre-cooked)

Broccoli

Paprika

Salt

Garlic Powder

Onion Powder

Mayonaise ( I use 100% avocado oil-based)

Olive Oil (or an oil of your choice such as avocado, which is what I used)


In a small mixing bowl, mix together these first 4 dry ingredients for your dry rub.


1 tablespoon of Paprika

1/2 teaspoon of salt

1/2 teaspoon of garlic powder

1/2 of onion powder


Preheat oven to 375 degrees


Rub all chicken breasts, front and back, with oil of choice. Take the dry ingredient mixture and sprinkle front and back of chicken until fully covered.


In a new mixing bowl, mix together the following 6 ingredients for the cream cheese mixture. In this exact order.


4 ounces of cream cheese

2 tablespoons of mayonnaise

1 tablespoon of garlic powder or minced garlic

1/2 teaspoon of salt

1 cup of shredded Mozza or cheddar cheese

1 1/2 cups of finely chopped broccoli


Spread the cheese and broccoli mixture into each chicken breast and wrap closed, placing a toothpick if needed to hold together or if you choose, wrap each chicken breast with 2 or 3 slices of bacon. I chose 1/2 with bacon and 1/2 without.


Place in a baking dish, baking uncovered for 30 minutes, or until fully cooked. I doubled my batch so baked each 4 chicken breasts for an exact 30 minutes.



Recipe TWO:


Now because I happened to have the QUESO DIP from Costco I had to see how amazing this would be in place of the cream cheese mixture!


Follow Recipe ONE fully until you get to the cream cheese mixture and replace it with this...


In a bowl measure out 1 full cup of Queso Dip and mix together with 1 1/2 cups of finely chopped broccoli.


Spread the cheese and broccoli mixture into each chicken breast and wrap closed, placing a toothpick if needed to hold together or if you choose, wrap each chicken breast with 2 or 3 slices of bacon. I chose 1/2 with bacon and 1/2 without.


Place in a baking dish, baking uncovered for 30 minutes, or until fully cooked. I doubled my batch so baked each 4 chicken breasts for an exact 30 minutes.
